Cauliflower Crust with Basil Pesto Pizza Recipe

On my never ending quest for finding lower calorie alternatives to my favorite foods. I stumbled upon a recipe for a cauliflower pizza crust.

Being a pizza lover, my natural curiosity was peeked with interest for this new found recipe.

My friend Jen posted her new found pizza love and turned me on to the website recipe girl.

Recipe girl is an amazing site filled with many delicious recipes for any girl to love. Here is a recipe for a cauliflower pizza crust below:

Ingredients you will need:
1/2 large head cauliflower (or 2+ cups shredded cauliflower)
1 large egg
1 cup finely shredded mozzarella cheese (or try another kind!)
1 teaspoon dried oregano
1/2 teaspoon dried minced garlic (or fresh garlic)
1/2 teaspoon onion salt

Directions: Use a cheese grater to grate down the cauliflower. You can microwave the cauliflower in the microwave for a few seconds to help soften the texture.

Take the shredded cauliflower into a food processor and make the cauliflower into crumbles do not over puree it. If you do not have a microwave you can steam the cauliflower and then mash it into chunks.

Once completed mix together the ingredients in a large mixing bowl.

Keep in mind one large cauliflower can be enough for two 9inch pizzas so toppings can be creative with any combination of sauces! You will need 2 cups of cauliflower for one pizza crust.

Preheat the oven to 450 degrees.
Spray a cookie sheet or pizza pan with nonstick spray.
In a medium bowl, mix the cauliflower crumbles (about 1 1/2 cups since they shrink after cooking) with the remaining crust ingredients.
Place the crust into a 9 to 12-inch prepared pan.
Spray the crust lightly with nonstick spray and bake for 15 minutes (or until golden). Remove the crust from the oven and turn the heat up to broil.

Below is a recipe for a skinny pesto sauce as an alternative to the normal tomato sauce. (Another great find from Jen).

Skinny Basil Pesto Sauce:
Ingredients:
1 cup basil
1 clove garlic
1/4 cup grated Parmesan
salt & pepper to taste
2 1/2 tbsp olive oil

Directions:
In a food processor add the basil, garlic, Parmesan cheese, salt and pepper until smooth. Slowly add the olive oil while pulsing. Store in a sealed container and refrigerate until ready to use or you can freeze this in zip lock bags to use at a later date.

Top your pizza with tomatoes, mushrooms and mozzarella cheese to taste. Broil the pizza for about 4 to 5 minutes or until the cheese is melted and the crust is golden brown.
