Ingredients
- 1 1lb Ground Turkey
- 1 tb olive oil
- 1.5 cups marinara sauce (low sugar)
- 1/2 cup Ricotta cheese
- 1 cup mozzarella cheese
- 2 to 4 raw medium zucchinis
- 1 tbs minced garlic
- 1 tbs onion flakes
- 1 tbs black pepper
- 1 tbs garlic powder
- 1 tbs Itailian seasoning
- 1 tbs onion powder
Instructions
- In a medium sauce pan add in the olive oil and the garlice
- Saute for about three minutes until the garlic is lightly toasted
- Add in the ground turkey and brown
- Season the turkey meat with pepper, salt, italian seasonings, onion and garlic powder (optional)
- Drain excess fat and grease from turkey and return to oven
- Pour in the marianara sauce and stir on medium to low heat
- Wash and cut zucchini into two even halfs, cutting down the middle
- Scoop the inside of the zucchini out of the zucchini and place on a baking dish face side up
- Once meat and sauce are cooked scoop meat into the zucchini halves
- Top the zucchini boats with a few dallops of the ricotta cheese
- Add the mozzarella cheese to each of the zucchini boats
- Cook zucchini boats for 30 mins at 350 degrees
- Sprinkle with parmasean cheese and enjoy! (optional)
